  1. Using a fork, poke holes in potatoes on both sides 
  2. Brine skin by turning potatoes in 2 tablespoons salt mixed with 1/2 cup water 
  3. Place potatoes on wired sheet and bake in 450 degree oven for 45 minutes to 1 hour
  4. To see if potatoes are cooked, use instant thermometer – it should read 205 degrees 
  5. Brush skin of potatoes with oil and bake another 10  minutes
  6. Open potatoes slicing an x on the top
  7. Top with butter, sour cream, and chives
