mashed potatoes
2 pounds potatoes, scrubbed (4 potatoes)
4 tablespoons unsalted butter (½ stick), melted
1 cup milk, warmed (add as needed)
1½ teaspoons table salt
Ground black pepper
- Place potatoes in large saucepan and cover with 1 inch salted water. Bring to boil over high heat; reduce heat to medium-low and simmer until potatoes are tender (a paring knife can be slipped into and out of center of potatoes with very little resistance), 20 to 30 minutes. Drain.
- While potatoes are cooking, melt butter in small pan or microwave.
- Heat milk in microwave.
- Mash potatoes with potato masher or fork and stir in butter. Add milk a little at a time until you have the consistency you want.
- Add salt and pepper to taste.
Serve immediately.
