onion rings


½ cup all-purpose flour
¼ cup cornstarch
2 tablespoons instant mashed potatoes
Big pinch of cayenne
1 cup cold club soda
2-3 medium-sized yellow onions

2-3 cups Panko breadcrumbs

Fine Sea Salt (it sticks better)
Canola or peanut oil for frying




  1. Mix first 5 ingredients and let sit 10 minutes
  2. Meanwhile, cut onions into ¼-inch rings
  3. Dry rings (dry rings stick to batter better than wet rings) and add to batter
  4. Add panko crumbs to a pie pan and then coat the battered-rings
  5. Deep fry in oil 2½ – 3 minutes
  6. Put on grated rack to degrease
  7. Salt to taste
  8. Serve with Blommin’ Sauce


bloomin’ sauce


½ cup mayonnaise

2 tablespoons ketchup

1 tablespoon horseradish root (comes in jar) or 2 tablespoons horseradish sauce

½ teaspoon Paprika
